I know project64 is the best one but that's windows only mupen64 and the other mac ported ones are garbage. Neither can play snap so I was.

Yes, I used this for a while. It's old and to access save states you need to pay up. But for what it's worth, it works well enough. On my old MacBook (late 2007) and then a school-issued one (2009) I was able to use wxmupen64+, or something like that. It had an iffy gui but it was much better compatibility-wise than sixtyforce. It doesn't seem to play nice with my newer MacBook Pro (2012) though, the B button doesn't work. There was also a Wine port of Project64 called ZeroN64.

I remember briefly trying OOT, which was okay. But being a Wine port it was a bit too non-native for my taste. Someone suggested to me mupen64py, but I have no idea how to set it up.

Dolphin is most definitely not a good N64 emulator. But Most Virtual Console games should run very well in Dolphin at this point. There is the overhead of Emulating a Wii emulating an emulator, but, most Virtual Console games should work fine in Dolphin. The three big exceptions would be Ocarina of Time, Pokemon Snap and Majora's Mask, with minor problems in Pokemon Puzzle League as well. There are also some games that work better on Dolphin due to shortcuts Nintendo took when emulating, like Mario Tennis (unless things have changed since I last used the N64 emulators.) If you know of other issues with the virtual console in Dolphin, I'll gladly look into them and setup issue reports.
